Hawaiian BBQ Pork Chops (One-Pot-Meal)

About the Recipe

This is a One-Pot-Meal which means that you only use one dish to cook your whole dinner! This particular One-Pot-Meal is Hawiian BBQ Pork Chops with potatoes, carrots, onions, tomatoes as the healthy side to the pork chops. I enjoy cooking both difficult and easy dishes, while this has a lot of ingredients it still could be considered a beginner's level recipe. My advice is to try it and fun with it! Switch out the vegetables if you wish, or the juice for apple juice. Have fun and enjoy my recipe!

From the Kitchen:

  • 2 cans of pineapple chunks in juice

  • 1 cup Sweet Baby Ray's BBQ Sauce

  • 4 tablespoons chopped fresh parsley

  • 6 garlic cloves, chopped or minced

  • 1 large red tomato, cut into 8ths

  • 1 sweet onion, cut into 8ths

  • 8 large carrots, scrubbed and chopped in 3rds

  • 4 small potatoes, scrubbed and cut in half

  • 3-4 pork chops

  • My Famous Pork Chop Rub

  • 2 tablespoons oil for the bottom of the Dutch oven or cast-iron pan

Steps:

Step 1


Chop all of your vegetables as directed above, ready your chopped parsley, minced garlic, and BBQ Sauce. Open your cans of pineapple chunks and set aside. Mix up your (My Famous Pork Chop Rub) in a large mixing bowl big enough to dip your whole porkchop in, one at a time.



Step 2


Coat the bottom of your pan or dutch oven with oil to keep things from burning to the bottom. After adding the oil, add one whole can of pineapple chunks and the juice to your pan and spread out the chunks evenly.



Step 3


Now coat each pork chop with the rub on the front and back, then lay them side by side in the pan on top of the pineapple chunks.



Step 4


Take your garlic and sprinkle it evenly over the whole pan and all the pork chops. Place the 8ths of onion around the pan in between the pork chops and the pineapple, (you will repeat this later with all the vegetables).


Step 5


Now, pour the BBQ Sauce over the top of just the pork chops. Sprinkle half of the parsley over the whole dish like you did with all of the garlic.


Step 6


Next you will take the remaining vegetables and place them between the fruit and meat until the dish is packed. You can put vegetables on top of the pork. Finish by pouring the second can of pineapple and pineapple juice over the top of the entire dish and spread the remaining parelsy evenly over the top.



Step 7


Cook at 400 degrees for 1 hour and 45 minutes - 2 hours.
