About the Recipe

This is a recipe for the perfect way to cook bacon for sandwiches!!

From the Kitchen:

  • 1 package bacon, you'll need 12 slices for 4 servings

  • 2 large round red tomatoes, I prefer vine tomatoes

  • 1 1/2 cups shredded lettuce, I use romaine

  • wheat, white, or rye bread, 8 slices

  • 4 tablespoons Mayonnaise, miracle whip, or Veganaise for spreading on one side of each slice of bread (optional)

  • 1 cup shredded cheese of your liking, I use a combination of cheddar and mozzarella

  • Non-stick spray for your baking sheets

Steps:

Step 1

Preheat your oven to 350 degrees. Spray two large baking sheets with a non-stick spray. Open your bacon, lay each slice next to each other on the baking sheets, and set aside.

Step 2

Get out your cutting board, your tomato, lettuce, and cheese. Chop your lettuce to fit the size of your bread or shred it. Cut your tomato into large slices.

Step 3

When the oven is preheated, put both of your baking sheets inside on two separate racks with about 4 inches of separation. Cook for 25 minutes, then check your bacon to see if it is crispy to your liking. If the bacon is not done, reset your timer for another 5 minutes. Keep adding another 5 minutes until the bacon is perfectly cooked. Remove the bacon from the oven and transfer onto paper towels to soak up the grease. If you want cheese melted on your bacon, remove the pans, add the cheese to the strips, then put it back in the oven for 1 minute.

Step 4

Now get your plates out and put two slices of bread on each plate. Then put any mayonnaise product you choose onto each slice of the bread on the side that faces up. Now add lettuce over your mayonnaise on one side and tomato to the slice on the other side of the plate for each plate.

Step 5

Before you remove your bacon from the oven get a couple extra plates out and lay sheets of paper towels over them to sop up some of the grease from your bacon. Remove your bacon from the oven, use a spatula to transfer the cheese-covered bacon to one of your plates covered with a paper towel. Do this for all of the bacon.

Step 6

Once you have removed the grease as much as possible, it is time to add the bacon and cheese to the sandwiches on whichever side you prefer and ENJOY!!!
